Ingredients
1/2 pumpkin
200 grams purple darling Brussels sprouts
1 tbsp sesame seeds
50 grams feta
25 grams pumpkin seeds
pepper
salt
olive oil
Dressing
2 tbsp hazelnut oil
1 tbsp balsamic vinegar
juice of 1/2
1 tsp honey
pepper and salt
Method
STEP 1
Preheat the oven to 200˚C
Thinly slice the pink darling sprouts.
STEP 2
Clean the pumpkin and cut into cubes. Place into a baking tray and sprinkle with olive oil, pepper and salt.
Roast for 20 minutes in the oven.
STEP 3
Halfway through the baking time of the pumpkin, place the sprouts together with the sesame seeds onto a separate tray.
Sprinkle with olive oil, pepper and salt and also put into the oven.
The Brussels take about 10 minutes.
STEP 4
Mix the sprouts and pumpkin together.
Place into bowls and sprinkle with the pumpkin seeds and the feta.
Serve with the dressing
