Pink Cauliflower Ice-Cream

A three ingredient pink cauliflower ice-cream made in the blender

Ingredients

3 medium bananas (about 300 grams)
1 cup Pink cauliflower rice, frozen
3-6 Tbsp honey depending on preference

Method
STEP 1
Peel and slice the bananas to 1 inch slices
Spread the banana slices on a parchment paper or inside a 1 gallon ziploc bag and freeze overnight (or until frozen solid)

STEP 2
In a food processor or high-powered blender blend frozen banana slices, cauliflower rice and honey together until smooth

STEP 3
Serve immediately as a soft serve, or pour into a glass or metal loaf pan. Cover with plastic wrap or lid and freeze

STEP 4
For best icecream consistency, take container out of the freezer and let sit out at room temperature for 10 mins. If it’s in a microwaveable container, you can also microwave it for 15 seconds until softened.
