Ingredients
5 cups cooked rice
2-3 cups cooked chicken shredded
400g broccoli, steamed (approximately 14oz)
1 cup sour cream/Greek yogurt
1 cup chicken stock
1 tbsp lemon juice
salt and pepper to taste
2 tsp dried thyme
2 cups grated cheddar cheese
potato chips roughly broken
STEP 1
Pre-heat the oven to 200ºC/400ºF.
Steam or blanche the broccoli for 5 minutes then combine with the rice and chicken.
STEP 2
Mix together the sour cream/yogurt, chicken stock and seasoning. Pour into the rice mixture and mix well. Season to taste and transfer to an oven-proof dish.
STEP 3
Top with cheese and potato chips and place in the oven.
STEP 4
Bake for 15-20 minutes until the cheese has melted and the potato chips are golden brown and crisp.
STEP 5
Remove from the oven and serve.
