Teriyaki beef and soba noodle bowl

This bowl of noodle heaven will brighten up any day! Light, fresh and delicious this dinner in a bowl is a winner!

Ingredients

270g packet soba noodles
2 tsp vegetable oil
500g beef mince
2 green onions, thinly sliced, plus extra to serve
1 garlic clove, crushed
2cm piece fresh ginger, finely grated
100g sachet teriyaki beef ready sauce
1 large carrot, cut into matchsticks
1 red capsicum, cut into matchsticks
1 Lebanese cucumber, cut into matchsticks
1/2 iceberg lettuce, roughly shredded
1 tbsp sesame seeds, toasted

Extra wasabi (optional), to serve
Wasabi dressing
2 tsp wasabi paste
2 tsp sesame oil
2 tbsp lime juice

 

Method

STEP 1
Cook noodles following the packet directions. Drain.

STEP 2
Meanwhile, heat a wok or large frying pan over medium-high heat. Add oil. Swirl to coat. Add mince. Stir-fry, breaking up mince with a wooden spoon, for 3 to 4 minutes or until browned. Add onion, garlic and ginger. Stir-fry for 2 minutes. Add sauce. Stir-fry for 2 to 3 minutes or until heated through. Remove from heat.

STEP 3
Make Wasabi Dressing: Using a fork, whisk wasabi, oil, lime juice and 2 teaspoons water in a jug. Season with salt and pepper

STEP 4
Transfer noodles to a bowl. Add 1/2 the dressing. Toss to combine. Divide noodles among serving bowls. Top with mince mixture, carrot, capsicum, cucumber and lettuce. Sprinkle with sesame seeds and extra onion. Serve with remaining dressing and extra wasabi, if using.
