Ingredients
3 cups spinach chopped
1 head lettuce chopped (about 3-4 cups)
2 peaches pitted and sliced
1 cucumber sliced in half lengthwise then cut into half moons
1/2 red onion sliced thinly
1 medium avocado pitted, peeled, and diced
1/3 cup walnuts chopped (plus more for topping)
For the dressing:
1/4 cup extra virgin olive oil
3 Tablespoons apple cider vinegar
3 Tablespoons honey (or agave if vegan)
1 teaspoon dijon mustard
1 teaspoon poppy seeds
pinch salt
STEP 1
Add all ingredients for dressing into a mason jar. Shake well. Taste and adjust seasonings if needed
STEP 2
Add spinach, romaine, peaches, cucumber, and onions to a large bowl and pour half the dressing on top of the salad and toss well to coat.
STEP 3
Add avocado and walnuts. Toss well. Add more dressing if needed.
STEP 4
When ready to serve, put salad on a plate or bowl. Top with extra toasted walnuts!
